# Expert Tips:

01 -
  • They're crispy outside, tender inside, and ready in under an hour with zero fuss.
  • The garlic toasts right onto the fries at the end, so you get bursts of flavor without any raw bite.
  • You can make them for yourself or feed four people—they disappear either way.
02 -
  • Don't skip drying your potatoes after cutting—moisture is the enemy of crispiness, and a quick pat with paper towels changes everything.
  • Flipping halfway through isn't optional; it's the difference between golden and unevenly cooked, and your guests will taste that difference.
03 -
  • Use a heavy baking sheet if you have one—it distributes heat more evenly and prevents the bottoms from browning too fast.
  • If your oven runs hot or cold, start checking at 25 minutes instead of waiting the full 30; ovens are temperamental and yours might surprise you.
