Red White Blue Ice Cubes (Printable version)

Colorful layered ice cubes with berries and coconut, frozen in juice to brighten summer drinks and party beverages.

# Ingredient list:

→ Fruit

01 - 1/2 cup fresh or frozen blueberries
02 - 1/2 cup strawberries, hulled and chopped
03 - 1/2 cup fresh coconut meat or unsweetened shredded coconut

→ Liquids

04 - 1 cup coconut water
05 - 1 cup natural blueberry juice
06 - 1 cup natural strawberry juice or cranberry juice

# Directions:

01 - Wash blueberries and strawberries thoroughly. Hull and chop strawberries, and cut fresh coconut meat if using.
02 - Fill one-third of each ice cube tray compartment with blueberries and pour enough blueberry juice to just cover. Freeze for approximately 1 hour or until firm.
03 - Top the frozen blueberry layer with coconut meat or a sprinkle of shredded coconut. Pour coconut water to fill the second third of each compartment. Freeze for an additional hour until set.
04 - Layer chopped strawberries over the set coconut layer. Fill to the top with strawberry juice or cranberry juice. Freeze until completely solid, about 2 more hours.
05 - Unmold ice cubes and add to lemonade, sparkling water, or cocktails for a festive look and flavor.
