01 - 1.1 lb boneless, skinless chicken breast, cut into bite-sized strips

→ Vegetables

02 - 1 red bell pepper, sliced
03 - 1 zucchini, sliced into half-moons
04 - 1 small red onion, thinly sliced

→ Aromatics & Seasonings

05 - 3 tbsp extra-virgin olive oil
06 - 2 cloves garlic, minced
07 - 1 tsp dried oregano

08 - Fresh parsley, chopped
09 - Lemon wedges

# Directions:

01 - Heat 2 tablespoons olive oil in a large skillet or wok over medium-high heat. Add chicken strips and cook 5-6 minutes, stirring occasionally, until golden and cooked through. Remove from pan and set aside.
02 - Add remaining 1 tablespoon olive oil to the pan. Add onion, bell pepper, and zucchini. Stir fry for 4-5 minutes until vegetables are just tender.
03 - Add minced garlic and dried oregano; stir for 30 seconds until fragrant.
04 - Return chicken to the pan and toss everything together for 1-2 minutes until heated through. Taste and season with salt and pepper as needed. Serve immediately, garnished with fresh parsley and lemon wedges if desired.
