# Directions:

01 - Place diced potatoes in a large pot, cover with water, and boil for 4-5 minutes until slightly tender. Drain well.
02 - Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add partially cooked potatoes and sauté for 8-10 minutes until golden and crispy, stirring occasionally.
03 - Push potatoes to one side. Add remaining 1 tbsp olive oil, then add bell peppers, red onion, and mushrooms. Cook for 5-6 minutes until softened.
04 - Stir in garlic, smoked paprika, cumin, turmeric, and chili flakes. Cook for 1 minute until fragrant.
05 - Add spinach and sauté for 1-2 minutes until just wilted.
06 - Mix everything together thoroughly. Season with salt and pepper to taste. Garnish with chopped parsley or chives. Serve hot with hot sauce if desired.
