01 - Dissolve strawberry gelatin in 1 cup boiling water, stirring until completely dissolved. Stir in 1 cup cold water. Pour into a shallow dish and refrigerate for 1 hour until set. Repeat process with lemon gelatin in a separate dish.
02 - Beat heavy whipping cream in a mixing bowl until soft peaks form. Set aside for later use.
03 - Beat cream cheese, sugar, and vanilla extract in another bowl until smooth and creamy. Gently fold whipped cream into cream cheese mixture until well combined and no streaks remain.
04 - Once both gelatin flavors are fully set, cut into 1/2-inch cubes using a sharp knife. Keep strawberry and lemon cubes separate.
05 - Layer ingredients in each jar: start with cream cheese mixture, add strawberry gelatin cubes with diced strawberries and marshmallows, add another cream layer, then lemon gelatin cubes with pineapple and more marshmallows. Finish with cream mixture on top.
06 - Refrigerate assembled parfaits for at least 1 hour to allow flavors to meld and layers to set properly.
07 - Just before serving, top each jar with whipped cream, place a marshmallow bunny candy on top, and sprinkle with pastel sprinkles for festive decoration.
